Parigot & Richard built their reputation on Pinot Noir and Chardonnay, but ‘Quartier Libre’ – roughly, ‘no rules’ – is their love letter to Aligot , Burgundy’s punchy, often-underestimated white grape. Hand-harvested, extra brut dosage, with a pure and direct character that the winery describes as ‘assertively indigenous.’ An off-the-beaten-track cr mant that’s excellent with anything briny or fried.
